Alsace white win – Auxerrois

Also known as Pinot Auxerrois, this is a white grape variety native to Lorraine, where it took off in 1950. Its name comes from the nurseries in Auxerre where it found refuge during the phylloxera crisis. Often vinified with Pinot Blanc, this variety is rarely used on its own, and is also used to make Crémant d’Alsace. It differs from Pinot Blanc in its low acidity.
When vinified on its own, it produces a supple, very pleasant white wine. A true Swiss Army knife of dry white wine, it can be drunk at any time! Great chefs will say that it goes perfectly with calf’s head, fish in sauce and candied turnip… No dish will be able to resist it.
Be careful, the Friandel cuvée is sweeter!
