Vineyard management: Traditional, ploughing has always been followed for organic farming
Winemaking and breeding : Hand harvest, de-stemming, soaking for 6 days, light pressing, static cold static decanting settling, temperature regulation, ageing on fine lees. Filtration before bottling, in order to have a clear and stable wine for a short ageing.
Tasting : Rich, fruity nose with exotic notes enhanced by a hint of spices. On the palate we find a semi-dry wine with all this aromatic palette present on the nose, lightness, freshness.
Food and wine pairing : Perfect as an aperitif (very fresh!), but also with all spicy, rich cuisines, and of course cheese.
