Tardy Harvest (Vendanges Tardives)

Tardy Harvest is harvested at a later stage, we only pick the dehydrated berries that have high sugar content. The methodology is botrysisation. To obtain it, it takes a wetter midsummer so that this fungus can grow, this is what is called noble rot.

After winemaking, this will produce a very mellow wine with over-ripening aromas. The power of concentration phenomenon is added to the grape’s identity, to its aromatic feature and to the development of noble rot (Botrytis Cinerea).

These wines can be kept for about fifteen years.
